10:51pm

this is indirectly related to the buh since it goes towards making milk.
i am making the heartiest fall soup ever.
oxtail, beef shanks, marrow bones, heart, roasted barley, turnips, parsnips, carrots, celery root, sunchoke, onion, parsley, thyme, green pepper corns, red pepper flakes, sea salt!
(i'm grossing out the vegetarians, i know...i'm sorry :(
i'm trying to make more soups from bones for the nutrients.

i roasted all the meat in the oven 1st for an hour, and now i am going to simmer it with the onions and herbs overnight.
then i will roast the barley and soak it for 7 hours.
i'll take the meat, bones and herbs out and strain it all to make the broth.
then add the barley and cook for an hour.
i will take all the meat off the bones and readd it to the soup and also add all the root veggies and cook until done.
i HOPE it will be good!

i've never made a soup exactly like this before. i hope it turns out.
and i certainly have never cooked a heart before. i'm not sure if it's ok to boil it...maybe it won't be.
we went shopping for weird meats today but it was really hard to find any organ meats or anything.
i don't know...it's an experiment!

i'm taking the recipe partially from the nourishing traditions cookbook

we also found that we can buy some organic whole milk from grass fed (pasture) cows. pasteurized but not homogenized.
now if only we could find RAW milk i'd be super happy.
i started reading "the untold story of milk" today and the evils of the dairy industry. i made it all the way to page 4! ha :)
i want to learn how to make my own yogurt, cream cheese, and other milk products.

there are so many cooking things i need like a food processor, and an iron skillet.
and good knives!

and i'd like to also get a small mill and make my own flour.

so many things i want to do and learn in this life and i have barely even scratched the surface.
